Vegetable Tom Yum Soup
4 c. chicken broth or stock
½ tsp. sirachi hot sauce
2 stalks lemon grass (smashed or cut into 1 inch pieces, or use from tube)
1 lime, juiced
4 shallots, thinly sliced
2 Roma tomatoes, chopped
8 oz. mushrooms, quartered
Cilantro
Add all to pot except cilantro. Boil, then simmer about 25 minutes. Garnish with cilantro.
